Might the Philippines be Asia’s Peru in terms of a gastronomic revolution?
Spain’s celebrated chef Andoni Luis Aduriz believes it.
In an interview with margauxlicious at Madrid Fusion, Aduriz specifically said that he would like to see the Philippines as Asia’s Peru. The Latin American country started a gastronomic revolution in the past two years, bringing Peruvian cuisine like ceviche to the world’s attention.
Aduriz also thinks that it’s fantastic that the Philippines has made an effort to make this country the place for a gastronomic revolution in Asia, even if it might be more logical for this revolution to take place in Japan or Korea.
Aduriz’ restaurant Mugaritz is currently ranked No. 6 in the world by the World’s 50 Best Restaurant Awards.
He will be giving a talk during the Madrid Fusion Congress on Saturday at 4:30 pm to discuss creativity in the kitchen. He is also part of a collaboration dinner with Mugaritz “grad” Jose Luis “Chele” Gonzalez at Gallery Vask on Sunday, April 26.
